Butter Pecan Ice Cream

When I first tasted this ice cream, I seriously thought I'd died and gone to heaven!!!  Homemade ice cream is not like it used to be.....that is if you have one of those new fandangled electric ice cream makers.  In fact, check the Amazon ad after this post.....and the Cuisinart machine that you see on the left is the one I own (and LOVE)!!!

Butter Pecan Ice Cream

You'll Need
  • 1/3 cup pecans, chopped
  • 1 tablespoon butter
  • 1 cup brown sugar
  • 2 eggs, beaten
  • 1-1/2 cups half-and-half
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

In a small skillet, melt the butter.  Once melted, add the pecans, and saute until light browned, stirring frequently.  Set aside.


In a medium saucepan, stir together the brown sugar, eggs, and half-and-half, and cook over low heat until nice and smooth.  Reduce heat to a simmer, and continue to cook for an additional 2 minutes, while stirring occasionally.  Remove from heat.


Stir in the heavy cream, vanilla, and pecans, blending well.



Set up your ice cream maker according to the package directions.

Carefully pour the ice cream mixture into your ice cream maker and let it run until done (again, according to your ice cream maker's directions).


At this point, the ice cream will be at a soft-serve stage.....VERY YUMMY!!!


Serve yourself a bowl, then transfer the remaining ice cream into a container with a lid, and place in your freezer.
