I recently found a recipe that caught my attention.....and decided that it would be a great addition to my cooking repertoire. As I am known to do.....I butchered the you know what out of it.....and ended up with an incredibly delicious dish!!! Everything about this recipe is easy peasy.....few ingredients.....a snap to put together.....short grilling time.....then it's ready to dig in and gobble up!
- 12 (1-inch) turkey meatballs (purchase 12-ounce fully-cooked pre-packaged turkey meatballs from the meat department)
- 1/2 green bell pepper, cut into 10 (1-inch) squares
- 1/2 onion, cut into 10 (1-inch) squares
- 1/4 cup pepper-peach preserve
- 1/4 cup BBQ sauce (I used Sweet Baby Ray's)
Preheat your grill to 350°.
If you plan on using wooden skewers, then you'll need to soak them for about 30 minutes prior to assembling the meatballs. If using metal skewers, then coat them with cooking spray.....it'll help with removing the meatballs when cooked.
Thread a meatball onto the skewer, then add a bell pepper and an onion. Repeat until you have 6 meatballs on the skewer, making sure you start and end with a meatball. Prepare second skewer the same way.
Microwave the preserve in a small microwave-safe container for 15 seconds.
Add the BBQ sauce, and mix well. Brush some of the mixture onto one side of the meatballs.
Grill the meatballs for 10 minutes, while occasionally turning and basting with the BBQ-preserve mixture.
If desired, serve over rice.
