Oh my.....but this was some GOOD stuff!!! I never tried this recipe as was originally written.....but that's half the fun of being creative in the kitchen.....you change this.....add that.....and you come up with something that has your stamp on it! This is one of those dishes.....which pretty much says it for roughly 90% of the recipes on this blog. We just served up a bowl of the shrimp with some of the sauce over top, and had a nice crusty chunk of French bread to dip into the melted butter. Oh.So.Yum!!!
Garlic Shrimp in Sherry Butter

You'll Need
- 1 stick butter
- 2 scallions, sliced
- 6 large garlic cloves, minced
- 1 heaping tablespoon dried parsley
- 1-1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 cup dry sherry
- 1 pound large shrimp, peeled and deveined
- 1/2 sweet red bell pepper, sliced thin
In a medium saucepan over medium-low heat, melt the butter.
Once the butter has melted, add the scallions and garlic, and sauté for 3 minutes.
Add the sherry, parsley, salt, and pepper, and simmer for 2 minutes. Set aside.
In a large skillet, add 3-4 tablespoons of the butter mixture.
Add the shrimp, and sauté over medium heat, adding more butter if needed. Cook until the shrimp are nice and pink.
Remove the shrimp with a slotted spoon to a plate, and set aside. Don't pour off the butter!
Add the red peppers to the skillet, and sauté for a couple of minutes.
Once the red peppers are slightly softened, add the shrimp, and the saucepan of butter mixture back to the skillet, and give it all a good toss.
Divide the shrimp between two plates, top with the butter mixture, and serve!
Serves 2 healthy portions
