Texas Caviar

I've had more than a king's ransom of the real deal of this tasty treat at Taste of Texas.....and it's also a tried and true recipe here at the Gulch.  Taste of Texas has a wonderful website.....and thankfully they don't mind sharing some of their yummy recipes!

Texas Caviar

You'll Need
  • 1 can black-eyed peas, drained
  • 1 tomato, diced
  • 2 chives, diced
  • 1 teaspoon fresh garlic, minced
  • 1/4 cup green bell peppers, diced
  • 1/4 cup cilantro, diced
  • 1/4 cup Pace Picante Sauce
  • Pepper, to taste
  • Salt, to taste

Let the peas drain, while you are chopping the veggies.


Dice the tomatoes, chives, cilantro, and bell peppers, and put into large bowl.  Add the garlic.


Mix well.


Add the peas to the vegetable mixture.


Give everything a good stir, being careful not to break up the peas.


Add the picante sauce, pepper, and salt.


Give everything a good stir.


Cover and refrigerate so the flavors will marry.


Serve with tortilla chips and enjoy!

  1. I LOVE Texas caviar. My recipe is slightly different, but probably has the same overall taste. We eat ours on saltine crackers because the old Texan who gave me the recipe told me that is what I should do. Who am I to argue? I made it about a month ago and it tasted wonderful!

  6. Never saw this with black eyed peas, and I live in the South, go figure! I will try it next time, as it looks so darn tasty, and healthy too!
