Polynesian Meatballs over Rice

This dish has a wonderful new taste sensation for me.....one that turns a simple meatball and rice into a delectable meal!  As is usually the case.....I found this recipe.....tweaked this.....tweaked that.....and butchered it up for good measure.....well, you get the picture.

Polynesian Meatballs over Rice

You'll Need
  • 1 pound Ground Beef
  • 1 Egg
  • 2 tablespoons Milk
  • 1/2 cup Italian Bread Crumbs
  • 1/4 cup Grated Parmesan-Romano Cheese
  • 1 (20-ounce) can Pineapple Chunks
  • 1/4 cup White Balsamic Vinegar
  • 2 tablespoons Cornstarch
  • 1 tablespoon Soy Sauce
  • 1/2 cup Brown Sugar


Preheat your oven to 350 degrees.

In a large bowl mix together the ground beef, egg, milk, bread crumbs, and cheese, until well incorporated.



Once well blended, grab a small handful and roll into a ball.  You'll end up with 6-7 meatballs.


Spray a double broiler with non-stick spray (this makes clean up a snap), and place your meatballs on the pan.


Start your rice at this point, according to package directions.

Put the meatballs into your preheated oven for 15 minutes, then turn them over.  Continue cooking for an additional 15 minutes (for a total of 30 minutes).


While the meatballs and rice are cooking, it's time to start the sauce.

Drain the juice from the pineapple chunks into a small saucepan.  Reserve the pineapple chunks for later.

Add to the pineapple juice in your saucepan, the vinegar, cornstarch, soy sauce, and brown sugar, and bring to a boil, stirring frequently.


Once the sauce has come to a boil, turn the heat down to a simmer.  Add the pineapple chunks, give it a good stir, and continue simmering till the meatballs are done (your sauce will be nice and thick).


Once the meatballs are cooked, remove them from the oven.


Now it's time to plate up your dish.....start off with a nice helping of rice on your plate.....add a couple of meatballs.....pour some of the sauce over the top, making sure to snag some of those pineapple chunks.....and VOILA!!!
