Minestra Rustica Della Salsiccia e Della Pasta

Mamma Mia.....but this is one delicious and filling soup!!!  This recipe came about from a slight oops I had on Super Bowl Sunday.  If you recall.....I was supposed to add some sausage to my queso.....after a comedy of errors.....that just didn't happen.  So then I was left with a pound of sausage and no recipe waiting for it.  I knew that today HAD to be the final day to use it before putting it into the freezer.  After vac'ing the upstairs, and piddling on the computer.....I was so not in the mood to put together a big meal.....so something with sausage was on the menu.  Considering how brrr chilly beanie it was outside.....it just seemed that this was the absolute most perfect evening for a hearty soup.....with that said (forgive me if I screwed up on the translation).....I give you.....

Rustic Pasta and Sausage Soup

You'll Need
  • 1 pound ground sausage
  • 1 tablespoon vegetable oil
  • 1 cup onion, diced
  • 4 garlic cloves, minced
  • 1 (14-1/2 ounce) can petite diced tomatoes
  • 1 (16-ounce) can butter beans, drained
  • 1 (8-ounce) can tomato sauce
  • 1 (14-ounce) can beef broth
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/2 teaspoon pepper
  • 1/2 teaspoon thyme
  • 1/2 pound Pipette pasta, cooked and drained
  • Shaved Parmesan

In a large pot, cook the sausage over medium heat till nice and brown.  Drain.


Heat the vegetable oil in a small pan over medium-low heat.  Add the onion and garlic, and sauté till translucent.


Add the onion/garlic mixture, tomatoes, butter beans, tomato sauce, beef broth, salt, oregano, basil, pepper, and thyme to the sausage.


Bring to a boil over medium-high meat.  Reduce heat to a simmer, and continue cooking for 10 minutes, stirring occasionally.


While the sausage mixture is cooking; bring a large pot of water to a boil.  Once at a rapid boil, add the pasta, and cook until done.  Drain.


Add the pasta to the sausage mixture, and blend in well.



Ladle into soup bowls, and sprinkle some shaved Parmesan over the top.
