Mercy!!! Never in all my life have I made an apple pie like this one.....all I can say is mercy!!! Mercy as in heavenly delicious! Mercy as in easy as pie (pun intended)! Mercy as in get your butt into the kitchen and whip one up for you and yours!
Upside Down Apple Pie

You'll Need
- 6 tablespoons butter, melted and divided
- 1/2 cup light brown sugar, packed
- 1/2 cup pecans, chopped
- 2 refrigerated pie crusts
- 1 cup granulated sugar
- 1/3 cup all-purpose flour
- 3/4 teaspoon cinnamon
- 5 large Granny Smith apples, or other firm apples, peeled, cored and cut into ½ inch slices
Preheat oven to 375 degrees. Thoroughly coat a deep-dish pie plate with nonstick cooking spray, then line the pie plate with waxed paper or parchment paper. Spray the waxed paper with cooking spray.
In a small bowl combine 4 tablespoons of the melted butter, brown sugar and the pecans, and mix well.
Spread the mixture into the pie plate.
Place one of the pie crusts over the nut mixture, pressing firmly, and making sure it comes up the sides of the pie plate. Set aside.
In a large bowl, combine the sugar, flour, cinnamon, and the remaining 2 tablespoons of melted butter, mix thoroughly.
Add the apples and gently toss to coat. Spoon into the piecrust.
Place the second pie crust over the apple mixture, making sure to trim and fold the edges together to make a tight seal. Cut three small slits into the top of the crust to vent.
Bake for 1 to 1-1/4 hours or until crust is golden brown. Make sure to place a foil-lined pan on the rack beneath your pie to catch drips!
When pulling the pie out of the oven, make sure to set it on the pan that was catching the drips (there will be sticky juices on the bottom of your pie plate).
Now for the magic! This needs to be done as soon as you remove the pie from the oven. Place a serving plate that's larger than the pie plate on top of the pie. Using hot mitts, make sure that you're holding the pie plate and the serving plate securely together, then quickly flip it over. Gently remove the pie plate and the wax paper, and let the pie cool. VOILA!!!

This is just a splendid post. I love it when bloggers really go to town and put out something detailed like this. That's a favorite dessert of mine, but I've never even thought of making it myself. Thanks for this post.
