White Bean & Ham Soup



I think I'm on a quick and easy kick right now.....and this recipe fits those requirements precisely!!!  This soup was absolutely delicious.....and all I added to my bowl at the table was a healthy sprinkling of Parmesan!

Soup + crusty bread = a hearty meal!!!  Enjoy!!!

White Bean & Ham Soup

You'll Need
  • 2 (15-1/2 ounce) cans Great Northern Beans, drained and rinsed
  • 2 medium carrots, diced
  • 1 small onion, chopped
  • 2 tablespoons butter
  • 2-1/4 cups water
  • 1-1/2 cups fully cooked ham, cubed
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1 bay leaf


In a medium bowl, mash one can of the beans; and set aside.

Sauté the carrots and onion in the butter in a large pot until tender.



Stir in the water, ham, salt, white pepper, bay leaf, whole beans, and mashed beans, and cook over medium heat until heated through.



Discard the bay leaf before serving the soup.





Serves 4

I am a big fan of white beans, even in chili. But, the mashing half of them sounds like an EXCELLENT idea!

Just found your blog and decided to make this Last night. My husband is never too excited when I announce "We are having Soup for dinner"... however this was PERFECT. Made with some chicken stock I had and the mashed up can of beans gave it the perfect texture. He had two bowls! : ) Thanks Anne!

MK...glad you liked the soup! Thanks for the reminder...I forgot I had one bowl left in the fridge...just had it for lunch! Even better leftover!
